Ingredients: 1/2 Ripe Avocado 1 tsp Lime juice (or lemon juice/white vinegar) Pinch of Salt Pinch of Red pepper flakes (optional for heat) Instructions: Scoop the avocado into a small bowl (or keep it in the shell for zero cleanup!). Add the lime juice and salt. Mash roughly with a fork until creamy but chunky. Top with red pepper flakes.

Ingredients: 2 tbsp Mayonnaise 2 tbsp Sour Cream or Greek Yogurt 1/2 tsp Garlic Powder 1/2 tsp Dried Parsley or Oregano 1 tsp Vinegar Pinch of Salt & Black Pepper Instructions: Combine the mayo, sour cream, garlic powder, herbs, and vinegar in a small bowl. Whisk vigorously with a fork for 20 seconds until smooth. Let it sit for the remaining 30 seconds while you slice your quesadilla (this lets the dried herbs hydrate slightly).

Ingredients: 2 tbsp Tomato Paste (provides the deep tomato flavor instantly) 2 tbsp Water (to thin it out) 1 tsp Olive Oil 1/2 tsp Dried Oregano (or "Italian Seasoning") 1/4 tsp Garlic Powder Optional: Pinch of sugar (if you like sweet sauce) Instructions: In a small microwave-safe bowl, whisk the tomato paste, water, and olive oil with a fork until smooth. Stir in the oregano and garlic powder. Microwave on high for 30-45 seconds (just until warm and fragrant). Stir again. If it's too thick, add a tiny splash more water.

Ingredients: ½ cup Sour Cream (or plain Greek Yogurt for a tangier bite) ½ fresh Lime ½ tsp Garlic Powder ¼ tsp Cumin (optional, adds earthiness) Salt & Black Pepper to taste (Optional) 1 tsp Hot Sauce (like Cholula) if you want a "creamy heat" The Method Scoop: Plop the sour cream into a small bowl. Squeeze: Squeeze the juice of the half lime directly over the cream. Season: Dump in the garlic powder, cumin, and a generous pinch of salt and pepper. Whip: Using a fork (it works better than a spoon for this), whisk vigorously for 20 seconds until the mixture is smooth and slightly airy. Serve: Plating it right next to the hot quesadilla.
